Hey guys! Sorry it’s been a little over 2 months since I’ve updated. I guess life has gotten in the way. I am still baking almost once a week still and will update this blog soon!

I’ve had a couple more paid orders since I’ve last updated and received one today as well! Four orders in one year (since September actually) isn’t too shabby!

Wild Banana Pudding Cupcakes

So this past weekend was a hard weekend for me. It was 10 years since my dad died. I wanted to do something that I knew he would like.. and his favorite dessert is banana pudding…

So why not make a cupcake!?!

Of course, I had to make some “special” cupcakes for Knick since he is ANTI-BANANA… (I don’t hold it against him)…….

I believe I have found my signature cupcake! Everyone went CRAZY… or should I say BANANAS for these cupcakes….

A coworker wanted me to make cupcakes for her little boy’s 3rd birthday party. While I don’t celebrate birthdays, I told her I could make her plain cupcakes and she could decorate however she wanted. She was fine with this and requested 30 cupcakes!

She wanted yellow cake filled with chocolate icing and topped with chocolate… and chocolate cake with cream cheese icing filling topped with cream cheese icing.

She said everyone enjoyed them!

** and on a sad note, one of my beaters died while making the second frosting so I’m currently working with one beater in my hand mixer**

A coworker had a request for someone. We knew this person liked peanut butter so I decided to go with dark chocolate cake and peanut butter frosting. OH YUM!

Let’s take a time machine back to the first weekend of September!……. Knick and I were getting ready to go on vacation and that included a night at my mom’s in Kingsport. Since I knew she’s been wanting cupcakes, I decided to surprise her by making her favorite flavor! Orange Creamsicle. AND it just happened to be the first football game of the season.. yeah, I know we’re not doing great, but I still love my TN VOLS!

Sunday was a busy baking day for me! I don’t think I’ve baked THREE different types of cupcakes in one day before.

We were going over to a friend’s house for a cookout so I had to make cupcakes to bring! I chose the dark choc/bacon ones and then made a simple white cake with lemon frosting.

THEN I made funfetti cupcakes for a friend… I didn’t like the way they turned out, but everyone said they tasted fine… so I know it’s just me. I made a vanilla buttercream to top it off.

This week’s cupcake was requested by a co-worker of Knick’s. I asked her what flavor she would like, she said lemon! After reading blog after blog after blog, I decided I wanted to try an olive oil cupcake.. They intrigued me… So lemon infused olive oil cupcakes it was! I decided on a lemon buttercream icing and tinted it just a bit with yellow food coloring.

I also tried making my own candied lemons, but let’s just say I will be trying again……….

I just have to say this recipe is SO easy! Just throw everything into one bowl and you’re done! The recipe said it makes 12 cupcakes, but I only got 10.

I was worried that the icing wouldn’t turn out the way I wanted it to, but it was OUT OF THIS WORLD. Tasted like sunshine! It’s so refreshing!

I hope Knick’s coworker enjoys these! ( And Lisette, I’m sorry you only have SEVEN cupcakes left….. You were supposed to have NINE.)

Makes 12

Ingredients:
115g Self Raising Flour
115g Lemon Infused Olive Oil (Approx. 1/2 Cup or 125ml)
115g Caster Sugar
2 Tablespoons Milk
1 Teaspoon Baking Powder
2 Eggs

Preheat the oven to 180 degrees celsius (350 degrees farenheit). Combine all the ingredients for the cake in a bowl and whisk until fully combined. Then place the mixture in the baking cases, filling them 2/3 full and bake for 15 minutes or until a skewer placed into the cake comes out clean. Take out of the tins and place on a cooling rack until completely cool.

Lemon Buttercream Icing: http://www.wilton.com/recipe/Lemon-Buttercream-Icing

1/2 cup solid vegetable shortening

1/2 cup butter softened

2 tablespoons lemon juice

1 teaspoon lemon zest

4 cups (approx. 1 lb.) confectioner’s sugar sifted

Additional lemon juice or milk (optional)

Makes: About 3 cups.

In large bowl, cream shortening and butter with electric mixer until light and fluffy. Add lemon juice and zest; beat well. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, if icing is dry, add additional juice or milk and beat at medium speed until light and fluffy.

I made chocolate cupcakes with chocolate frosting and brownies with peanut butter filling for a coworker’s mom, who is battling cancer. It may seem so trivial of a thing when one is battling this horrible disease, but it shows love and support. I know I can’t do much in the way of curing or helping with the pain or say any magical words, but I can bake.

I hope she will enjoy these goodies.
